Reduce heat to medium, make a well in centre of pot, add a little Oil if required. Add Garlic, and Ginger, sauté for 30 seconds. Add in Pepper, Allspice, and Thyme. Add in Water, from Bean soak, bring to a simmer. Add in the Beans, bring back to a simmer.
Simmer Beans covered for 40 minutes, or until Beans are tender.
Add the Rice to the pot, mix well. Add the Coconut Milk, bring back to a simmer. Cover the pot, simmer for 30 minutes.
The liquid will burn off slowly as the rice cooks away, so keep an eye on things.. in the event your Rice is not fully cooked, you may need to add 100 ml of Water. Keep adding 100 ml at a time, every 5 minutes, until the Rice is the desired consistency.
