Vinegar Based Coleslaw

Ingredients:

1/2 head
Green Cabbage, thinly sliced
1/4 head
Red Cabbage, thinly sliced

Carrot, grated
1
Onions, thinly sliced, soaked in, 30 ml White Wine Vinegar and Water 20 minutes.
60 ml
Apple Cider Vinegar

Lime Juice and Zest
30 g
Dijon Mustard
15 g
Honey
60 ml
Olive Oil
3 g
Celery Seed
3 g
Salt
3 g
Pepper, ground

Method:

In a small bowl vigorously whisk together Vinegar, Mustard, Honey Lime, Salt, Pepper, Celery Seed, and Olive Oil, until it becomes an emulsion, set aside.
In a separate bowl mix together Cabbages, Carrots, and Onion.
Next, pour a small amount of the Dressing on the Cabbage mixture and mix together until combined and until desired amount of Dressing is achieved.
