In a bowl mix Brown Sugar, Garlic, Vinegar, Asian Fish Sauce, Soy Sauce, Ketchup, Pepper, Sriracha Sauce.
Pour half sauce into baking dish, Put Pork Chops into baking dish. Pour rest of sauce over Pork Chops. Put in fridge for 3 hours, toss once an hour.
Remove Pork Chops from Sauce.
In a fry pan on medium heat, add Oil, allow to get hot. Saute Pork covered for 5 minutes, turn, and fry for 5 minutes more.
Remove Pork Chops from fry pan, then pour marinade to fry pan, bring to a simmer uncovered for 5 minutes.
Put Pork Chops back into fry pan with Sauce, reduce heat to medium low. Simmer and baste for another 10 minutes.
Remove Pork, cover, set aside. Add Cornstarch to Sauce until desired thickness.
Serve Pork covered in Sauce.
