Brush inside and outside of Chicken with Butter. Season inside Chicken with Salt, Pepper, Thyme, and Rosemary. Season outside of Chicken with Salt, and Pepper.
In a roasting pan lay a bed of Onions, place Chicken on top.
Tie off Chicken Legs.
Roast for 1 hr 15 min, or internal temp of 75 ℃ / 170 ℉.
Remove Chicken from the pan, set aside for 10 minutes.
Gravy:
- Add Chicken Stock to roast pan, on medium heat. Bring to a simmer, lower heat to low, simmer for 5 minutes.
Add Cornstarch, until desired thickness.
