In a fry pan on medium high heat, add Oil, allow to get hot. Add Butter, allow to melt, get hot. Add Pork Chops, sauté cover, frequently drenching Chops with Oil in the pan, for 4 minutes, (until Chops are golden brown). Repeat for the second side of Chops. Transfer to a plate, cover, set aside.
Reduce heat to medium. Add Garlic, sauté for 30 seconds. Deglaze pan with Wine, allow Wine to mostly reduce. Add Honey, Stock, and Chili Sauce.
Add Pork Chops back into the pan, baste generously with Sauce, cover, simmer for 8 minutes.
Remove Chops, cover, set aside. Add Cornstarch to the pan until desired thickness.
Serve Chops smothered in Sauce.
