In a fry pan on medium high heat add allow to get hot, add Onions, lightly season with Salt, Pepper, and Garlic Plus. Saute, stirring occasionally, for 5 minutes. Add Mushrooms, saute for 7 minutes. Add Garlic, saute for 30 seconds. Deglaze fry pan with Wine. Stir in Ketchup, Worcestershire, and Beef Broth. Bring to a simmer for 10 minutes.
Roux:
- In a skillet on medium heat, add Butter, allow to melt. Saute Butter until bubbling stops. Add Flour, saute for 3 minutes stirring continuously. Add Roux to Gravy, mix well.
Set Gravy aside.
- Steaks:
- Combine Beef, Salt, Pepper, Garlic, Mustard, Ketchup, Worcestershire, Soy Sauce, Egg, Cayenne, and Breadcrumbs in a mixing bowl. Mix well. Cover and refrigerate for 2 hours.
Divide meat into 5 equal portions. Form into oval patties about 200 g each, 1.5 cm thick.
In a fry pan on medium high heat, add Oil, allow to get hot. Add the Patties and saute until browned, 4 minutes per side. Deglaze fry pan with Wine. Pour in Gravy and bring to a simmer; reduce heat to medium low and continue 5 minutes.
