In a fry pan on medium high heat, add Oil, allow to get hot. Add Sausage, sauté for 10 minutes. Reduce heat to medium, deglaze pan with Wine, allow Wine to mostly reduce. Allow Sausage to cool.
In a bowl, add Sausage, along with all juices, Seasoning, and Cheese, mix well.
Roll out pastry on to a floured surface. Brush Egg along a 2.5cm strip, on the short side of the pastry. Add an even layer of the Sausage mixture over the Pastry, except the egg washed strip.
Roll pastry into a log being careful to roll tightly so filling does not spill out. Seal tightly at ends.
Slice into 13 mm rounds, place on parchment lined cookie sheet and bake 15 minutes until golden brown and puffed up.
