In a sauce pan on medium high heat, add Oil, allow to get hot. Add Onion, and Chili, lightly season with Salt, Pepper, and Garlic Plus. Saute Onions, for 5 minutes, add Red Pepper, saute for 4 minutes. Add Sausage, break up into small pieces, sauté for 8 minutes.
Add Rice, Paprika, and Salt, sauté for 4 minutes.
Reduce heat to medium, add Garlic saute for 30 seconds. Deglaze pan with Wine, allow Wine to mostly reduce
Add Tomatoes and Chicken Stock, simmer for 40 minutes, stirring regularly.
