In a pot on medium high heat add Oil, allow Oil to get hot. Add Onion, and Chili, lightly season with Salt, Pepper, and Garlic Plus. Sauté for 6 minutes. Add Celery, sauté for 4 minutes. Add Leek, lightly season with Salt, Pepper, and Garlic Plus, sauté for 4 minutes.
Add Carrot, lightly season with Salt, Pepper, and Garlic Plus. Sauté for 4 minutes. Deglaze with Wine, allow Wine to reduce. Add Sausage, mix well, sauté for 10 minutes. Add Garlic, sauté for 30 seconds. Mix well. Reduce heat to medium. Deglaze with Wine, allow Wine to reduce.
Add in Salt, Pepper, Oregano, and Bay Leaves, mix well.
Add Tomatoes, and Chicken Broth. Bring to a simmer. Reduce heat to medium-low, simmer for 1 hour. Add Beans to Soup.
In a pot add Water, and 10 g of Salt. Bring to a boil, boil Pasta for 8 minutes. Drain Pasta and allow to cool.
Divide Soup among bowls. Add Pasta when serving Soup. Top with Parmesan, drizzle with Olive Oil. Serve with Bread for dunking.
