Pasta Alla Norma
Ingredients:
300 g
Rigatoni, boil 10 minutes in Water with 10 g of Salt, keep 250 ml of water

Olive Oil
20 g
Basil, finely chopped
400 ml (1 can)
Italian Tomatoes, blended, add Basil

Eggplant, cut in half lengthwise

Onion, chopped
1
Red Finger Chili, finely chopped
4 cloves
Garlic, crushed

Parmesan Cheese
6 g
Salt
3 g
Pepper, ground
Method:
Preheat oven to broil.
Cover cookie sheet with parchment paper. Put Eggplant on cookie sheet, flat side down.
Broil Eggplant for 15 min, when cool enough to handle scoop out Eggplant, discard the skin.
In a sauce pan on medium high heat add Olive Oil. When Oil is hot add Onion, and Chili. Saute for 8 minutes.
Reduce heat to medium.
Add Garlic, saute for 30 seconds.
Add Tomatoes, Salt, and Pepper, simmer for 40 minutes partially covered.
Add Eggplant, and Rigatoni, simmer for 3 minutes, add Pasta Water if too dry.
Remove from heat, add Cheese, mix well.
