In a pot of Water, add 6 g of Salt. Turn heat to high, bring Water to a boil. Add Pasta, bring Water back to a boil, reduce heat to medium low, simmer pasta for 9 minutes (until Pasta is al dente).
In a cold sauce pan add Guanciale, turn on heat to medium. Sauté for 6 minutes, (until golden brown). Add the Pepper, sauté for 1 minute.
Add 250 ml of the Pasta Water to the Guanciale, turn the heat to high and reduce by about half.
Add Pasta to the Guanciale. Stir the Pasta as it finishes cooking, adding more Pasta Water if required until the pasta is done and the sauce thick and creamy.
Turn off heat, add Cheese to the Guanciale. Mix well.
