In a fry pan on medium heat add Olive Oil, allow to get hot, Add Onions, and Chili. Sauté for 15 min. Add Garlic, then sauté for 30 seconds. Set aside, allow to cool.
In a large bowl add Beef, Pork, and Lamb, mix well.
Add Breadcrumbs, and Cheese to the Meat. Add Cumin to Meat. Mix well.
Add Rosemary, Thyme, Basil, Oregano, and Eggs. Add Salt and Pepper. Mix well.
Add Onion mixture, and Mustard. Mix well, and, with wet hands, roll and pat into golf ball sized Meatballs
In a sauce pan on medium high heat add 1/2 Olive Oil, and 1/2 Sunflower Oil. Add Meatballs. Fry for 2 1/2 minutes, turn then fry for another 2 1/2 minutes, being careful not to break them up.
Place Meatballs on a baking sheet lined with parchment paper. Roast in the oven for 15 minutes.
