In a pot on medium high heat, allow to get hot then add Oil. Add Onions, lightly season with Salt, Pepper, and Garlic Plus. Saute for 8 minutes, stirring occasionally. Add Celery, lightly season with Salt, Pepper, and Garlic Plus. Mix well, saute for 8 minutes. Add Carrot, lightly season with Salt, Pepper, and Garlic Plus. Mix well, saute for 5 minutes, stirring regularly. Add Peppers, lightly season with Salt, Pepper, and Garlic Plus. Mix well, saute for 8 minutes, stirring regularly.
Add in Salt, Pepper, Oregano, and Thyme.
Reduce heat to medium.
Make a well in centre of pot, add enough Olive Oil to cover the bare bottom of the pot. Add in Garlic, saute for 30 seconds, mix well.
Deglaze pot with Wine, allow Wine to mostly reduce, stirring continuously.
Add in Tomatoes, bring to a simmer. Simmer for 90 minutes, stirring occasionally.
