In a large fry pan on medium heat, add Olive Oil, and Butter, allow to get hot. Add Chicken Prosciutto side down, sauté for 5 minutes, (until the Prosciutto is lightly crispy). Flip Chicken, sauté for 5 minutes more.
Remove Chicken, set aside. Add Garlic, sauté 30 seconds. Deglaze pan with Wine, allow Wine to mostly reduce. Add Chicken Stock, bring back to a simmer. Simmer Sauce for 5 minutes.
Add Lime Juice, mix in the Sauce.
Serve Chicken with the Sauce, and the crispy Sage Leaves on top.
