In a cold large bottomed pot, add Guanciale. Turn heat on to medium high, sauté for 5 minutes. Add Wine, deglaze pan, allow Wine to reduce. Reduce heat to medium.
Add Marinara Sauce, simmer for 15 minutes.
Add Bucatini to the Sauce, mix for 2 minutes.
Remove from heat. Add Cheese, mix well, allow to melt, mix well.
