In a bowl mix together all ingredients for Chicken except the Oil. In a wok on medium high heat add Oil, allow to get hot. Add Chicken pieces ensuring not to crowd the pan, and cook in batches until crispy on the outside and cooked through in the middle.
Ratan Jot:
- In a small fry pan on medium heat, add Oil. Allow Oil to get hot, then add Ratan Jot, stir for 2 minutes. Strain Ratan Jot into a bowl.
- In a wok on medium high heat, add Oil, allow to get hot. Add Ginger, Onions, and Chili. Lightly season with Salt, and Pepper. Sauté for 4 minutes. Add Tomato Paste, sauté for 2 minutes, stirring continuously. Add Garlic, sauté for 30 seconds.
Add in Chicken Stock, Red Chili Sauce, Soy Sauce, Salt, Pepper, and Corn Starch, mix until smooth. Add in Ratan Jot liquids.
Whisk together Sauce ingredients one more time before pouring into the fry pan. Stir continuously, allowing the Sauce to come to a rolling boil to thicken. Once glossy and thick, add fried Chicken, and stir to coat.
Serve with Rice.
