In a large pot on medium high heat add Oil, allow to get hot. Add Onions, and Chili, lightly season with Salt, Pepper, and Garlic Plus. sauté for 5 minutes, (until slightly browned).

Add Spices. Toast Spices for 15 seconds until aromatic. Add Ginger, sauté for an additional 30 seconds.

Add Lamb, sauté Lamb for 10 minutes.

Reduce heat to medium. Make a well in centre of the pan, add Garlic, sauté for 30 seconds, mix well.

Add Tomatoes, mix well, scrape pan for fond. Bring Sauce to a simmer, simmer Sauce for 30 minutes.

Increase heat to medium high, add Chicken Stock. Bring back to a simmer, add Potatoes, and Salt. Simmer covered for 30 minutes, (until Potatoes are tender).
