In a sauce pan on medium heat add Oil, allow to get hot. Add Spices, saute while stirring for 10 seconds. Add Onion, and Red Finger Chili, lightly season with Salt, and Pepper, saute for 6 minutes (until golden). Add Ginger, and Garlic, saute for 30 seconds, (until fragrant).
Add Tomatoes, and Mushrooms, bring to a simmer for 30 minutes. Add Potatoes, stir to coat evenly in the spiced Oil. Add Chicken Stock, Lime Juice, and Salt, mix well.
Simmer covered for 20 minutes stirring occasionally. Add in Cauliflower, and Beans, simmer covered for 20 minutes, (until Vegetables are fork tender). Then remove the lid of the pan, increase heat to medium high, and continue stirring the Vegetables for 10 minutes. If required add in Cornstarch, to thicken Gravy.
