Youvetsi
Braised Chicken with Orzo
Ingredients:
- 500gOrzo Pasta
- 80 mlOlive Oil
- 2 KgChicken Thigh
- 1Onion, finely chopped
- 400 mlItalian Tomatoes, blended
- 30 gTomato Paste
- 1Red Finger Chili, finely chopped
- 1 LChicken Stock
- 1 cupParmesan Cheese
- 2 clovesGarlic, crushed
- 6 gSalt
- 5 gPepper, ground
- 1 stickCinnamon, ground
- 2Cloves, ground
- 1Bay Leaf, ground
Method:
- Preheat oven to 190 ℃ / 375 ℉.
- In a Dutch Oven on medium heat, add Olive Oil, allow to get hot then add Onion, and Chili, sauté until it’s soft and golden. This usually takes about 10-12 minutes. Don’t rush it. It can burn.
- Add the Chicken, Salt, Pepper and sauté for 8 min.
- Add in Tomato Paste, sauté for 2 min. Add Garlic, sauté for 1 minute.
- Add the Tomatoes, Cinnamon, Bay Leaf, Cloves, Oregano and 1/4 of the Chicken Stock and bring to a boil.
- Cover the Dutch Oven and place in the oven for 40 minutes.
- Remove the Dutch Oven from the oven.
- Heat the remaining 3/4 of the Chicken Stock in a saucepan and bring to a boil. Add the Stock, Orzo and add Salt to the Chicken and bake it for 15 minutes covered. Uncover it and give it a nice stir. Bake it uncovered for another 10 minutes raising the heat to 200 ℃ / 400 ℉. This will give the stew a nice golden brown colour.
- Sprinkle with Parmesan Cheese.
