Spanakorizo
Ingredients:
- 1 KgSpinach, chopped
- 1Red Onion, finely chopped
- 6 clovesGarlic, crushed
- 60 mlOlive Oil
- 45 gTomato Paste
- 1Lemon Juice, and Zest
- 450 gBasmati Rice, washed and soaked for 15 minutes
- 1.3 LChicken Stock
- 5 gSalt
- 5 gPepper, ground
- 2 gOregano, ground
- 2 gDill Seed, ground
Method:
- In a large pot on medium high heat add Olive Oil, then add Onions, lightly season with Salt, and Pepper. Sauté 10 minutes. Add Tomato Paste, sauté for 2 minutes, mix well. Add Garlic saute for 30 seconds.
- Reduce heat to medium.
- Add Spinach and Chicken Stock, allow Spinach to wilt. Add Rice, Dill, Oregano, Lemon, Salt and Pepper.
- Bring to a boil and stir well. Reduce heat to a simmer, cover the pot and cook for 20 minutes. Do not stir or uncover the pot.
- Fluff the Rice with a large spatula and heat for 5 more minutes.
