Spanakopita Triangles
Ingredients:
- 120 gButter, melted
- 1Onion, diced
- 500 gSpinach
- 340 gFeta Cheese, crumbled
- 1 boxPhyllo Dough, sliced into 4 strips
- 2Eggs
- 100 gParmesan Cheese, grated
- 45 mlOlive oil
- 6 clovesGarlic, crushed
- 3 gSalt
- 3 gPepper, ground
- 2 gDill Seed, ground
Method:
- Preheat oven to 175 ℃ / 350 ℉.
- In a Sauce Pan on medium heat, add Olive Oil. Allow pan to get hot
- Add Onions, lightly season with Salt, Pepper, and Garlic Plus, sauté for 5 minutes.
- Add 60 ml Water, and Spinach, cover and cook it all the way down. About 3 minutes.
- Add the Dill, mix well. Make well in centre of pan, add Garlic, sauté for 30 seconds, mix well. Remove from heat and allow to cool completely.
- In a separate bowl, Combine the Feta and Parmesan with the Eggs.
- Combine the Cheese mixture with the cooled Spinach mixture. Season Salt and Pepper.
- Place 1 sheet of dough on a dry clean surface and brush with melted butter lightly.
- Place a tsp of the mixture at the bottom of each strip and begin folding into triangle form.
- On a baking sheet lined with parchment paper, add a rack. Place triangles on rack, evenly spaced apart. Brush with additional butter and bake for 25 minutes.
- Allow the triangles to cool at least 10 minutes before serving.
