Soupa Fakes
Ingredients:
- 450 gLentils
- 60 mlOlive Oil
- 2Onions, chopped
- 1Red Finger Chili, finely chopped
- 2Carrots, shredded
- 4 stalksCelery, finely chopped
- 30 mlWhite Wine Vinegar
- 800 mlItalian Tomatoes, blended
- 2 LChicken Stock
- 6 clovesGarlic, crushed
- 15 gSalt
- 5 gPepper, ground
- 4Bay Leaves, ground
- 1 gCumin Seeds, ground
- 2 gOregano, ground
Method:
- Soak the Lentils for 1 hour, then drain. Add Lentils to a pot of cold Water. Bring Water to a boil, then boil for 14 min. Drain the Lentils.
- In a Dutch Oven on medium high heat, add Olive Oil. Add Onions, and Chili Pepper, lightly season with Salt, Pepper, and Garlic Plus. Sauté for 7 min. Add Celery, lightly season with Salt, Pepper, and Garlic Plus, sauté for 6 min, and Carrots, sauté for 6 minutes, until they soften.
- Make a well in centre of Dutch Oven, add Garlic, saute for 30 seconds, mix well. Add Bay Leaves, Oregano, Vinegar, and Cumin, mix well.
- Reduce heat to medium stir, then add Tomatoes and Chicken Stock.
- Cover the pot and simmer for 45 minutes over medium to low heat.
- When ready, add Salt, Pepper, and Lentils.
- Simmer for 10 more min.
