Kota me Bamies
Ingredients:
- 1 KgChicken Thighs, or Leg Quarters
- 1 KgOkra, cut tops off, dried
- 125 mlOlive Oil
- 2Onions, sliced whole into rounds, from stem to root
- 1Red Finger Chili, finely chopped
- 4 clovesGarlic, peeled, sliced
- 400 mlItalian Tomatoes, blended
- 3 g (ish)Garlic Plus
- 10 gSalt
- 2 gOregano
- 4 gPepper, ground
Method:
- Preheat oven to 200°C / 400°F.
- In a fry pan on medium high heat, add Oil, allow to get hot. Add Okra, lightly season with Salt, Pepper, and Garlic Plus, fry for 5 minutes, (until some of them get golden). Do not cook Okra through. Remove from heat and place them in a large roasting pan.
- Lightly season Chicken with Salt, Pepper, and Garlic Plus. Add Chicken to the fry pan, fry for 3 minutes on each side. Add Chicken to the roasting pan, either in the centre or around the Okra.
- Add Onions, and Chili to the fry pan, lightly season with Salt, Pepper, and Garlic Plus, fry for 5 minutes, add Garlic, fry for 30 seconds. Place Onions in the roasting pan with the Okra, and Chicken.
- Pour Tomatoes over the Okra, and Chicken. Season with Salt, Pepper, and Oregano. Mix well.
- Cover pan and bake covered for 30 minutes.
- Uncover pan, bake for 1 hour, (until Chicken is completely cooked through).
- Serve
