Greek Pasta Salad
Ingredients:
- 500 gTricolour Rotini Pasta, boiled 10 min., allow to cool
- 200 gFeta Cheese, crumbled
- 6 gOregano
- 2 gSalt
- 4 gPepper
- 3 clovesGarlic, crushed
- 1Onion, thinly sliced, soaked in, Water and 30 ml White Wine Vinegar for 20 minutes
- 1Red Finger Chili, finely chopped
- 1Cucumber, quartered, and 3 mm slices
- 1Red Pepper, thin slices
- 5Radishes, finely chopped
- 1Tomato, 1 cm cubes
- 80 mlWhite Wine Vinegar
- 80 mlGreek extra virgin olive oil
Method:
- In a large bowl add Pasta, Cucumber, Red Pepper, Radishes, Chili, Feta, and Onions.
- Add Oregano, Salt, and Pepper
- Drizzle over Vinegar, mix well, refrigerate for a minimum of 30 minutes. Add Olive Oil
- Mix very well
- Note:Refrigerate for at least 1 hour before serving. Mix again before serving
