Greek Cucumber Salad
Ingredients:
- 1Red Onion, cut into thin slices from stem to root, Soaked a minimum of 20 minutes in 30 ml White Wine Vinegar, and enough Water to cover
- 1Cucumber, quartered lengthwise, cut into 0. 5 cm slices
- 100 gFeta Cheese, crumpled
- 45 mlWhite Wine Vinegar
- 5 gBrown Splenda
- 45 mlOlive Oil
- 2 clovesGarlic, crushed
- 10 gBasil, finely chopped
- 4 gSalt
- 2 gOregano, ground
- 1 tspThyme, ground
- 3 gPepper, ground
Method:
- Add Cucumber to a bowl, then add Onion. Add Vinegar, Sugar, Garlic, Basil, Oregano, Thyme, Salt and Pepper. Mix it all together, with a spoon. Add Feta, Mix thoroughly.
- Let Salad sit for a minimum of 20 minutes. Add Oil, mix well.
- Serve
