Greek Cauliflower, Pepper, and Zucchini
Ingredients:
- 2Zucchini, peeled, 5 cm x 1.5 cm x 1.5 cm rectangles
- 1/2 headCauliflower, broken up into 2 cm florets
- 1Red Pepper, cut into 1 cm strips
- 1Yellow Pepper, cut into 1 cm strips
- 1Onion, quartered, layered
- 60 mlOlive Oil
- 2Lime, Zest, and Juice
- 40 gParmesan Cheese
- 10 gGarlic Powder
- 1 gCayenne Pepper
- 6 gSalt
- 4 gPepper, ground
- 3 gOregano, ground
Method:
- Preheat oven to 175 ℃ / 350 ℉.
- In a bowl, add Zucchini, Cauliflower, Garlic, Peppers, and Lime.
- Toss until well mixed.
- Add Salt, Pepper, Cayenne, and Oregano, toss until well mixed.
- Add Olive Oil, toss until well mixed.
- On a baking sheet lined with parchment paper, place Vegetables in a single layer.
- Bake for 60 min.
