Greek Baked Chicken with Potatoes
Ingredients:
- 1 KgChicken Thighs
- 500 gItalian Sausage
- 2 KgPotatoes, cut in 4 cm cubes
- 2Red Peppers, 2 cm squares
- 2Yellow Peppers, 2 cm squares
- 3Zucchini, halved lengthwise, 1 cm slices
- 2Onions, quartered, divide layers
- 2Lime, Juice, and Zest
- 4 clovesGarlic, crushed
- 125 mlOlive Oil
- 10 gSalt
- 4 gOregano, ground
- 1 gThyme, ground
- 2 gDill Seed, ground
- 4 gPepper, ground
Method:
- In a mixing bowl add in Olive Oil, Oregano, Thyme, Dill Seed, Garlic, Lime, Salt and Pepper, mix well.
- Add in Chicken, Italian Sausage, Potatoes, Peppers, Zucchini. Mix until well combined. Marinate for a minimum of 30 minutes or better overnight.
- Preheat oven to 200 ℃ / 400 ℉.
- Place Chicken mix in a roasting pan along with marinate juice. Cover pan then bake for 1 hour, (until Chicken is fully cooked).
- Let sit for 10 minutes.
- Serve
