Add Salt, Pepper, Paprika, Cayenne, Mustard, Nutmeg to the pan, mix well.
Bring Cream to a simmer.
Reduce heat to low. Add Mozzarella Cheese to the pan.
Keep heating until Cheese is melted.
Roux:
- In a skillet on on medium heat add Butter, simmer until frothing slows (3 minutes). Add in Flour, stir continuously for 3 minutes.
Add Roux to the Sauce, mix well. Add in Potatoes mix gently until Potatoes are covered in Sauce. Add 1/2 the Potatoes to a 33 cm x 23 cm baking dish, and level.
Add 1/2 the Cheese on top of Potatoes. Add rest of Potatoes to baking dish, level.
Add rest of Cheese to baking dish.
Bake for 1 1/2 hours.
