Strawberry Pie
Ingredients:
- 2Pie Crusts
- Sauce:
- 1 LWater
- 300 gStrawberries
- 2Limes, Zest, Juice
- 20 gBrown Splenda
- 25 gSplenda
- 10 gSalt
- 170 gCorn Starch, mixed in enough Water to create a thin slurry
- 21 g (3 pkg)Gelatin
- 3 KgStrawberries, cut in 1 cm cubes
- Whipped Cream Topping
Method:
- Preheat your oven to 190 ℃ / 375 ℉.
- Place Pie Dough in the plates, allow a minimum of 1 cm over hang, (to help prevent sagging). With a fork poke holes every 5 cm in the Pie Dough. Place Crusts in the fridge covered for a minimum of 1 hour, (for the dough to relax).
- Bake the crust for 8 minutes, trim the excess Crust from the edges. Continue baking for an additional 10 minutes or until golden, allow to cool completely.
- Sauce:
- In a blender add Water, Lime, Splenda, Salt, Gelatin, and Strawberries. Blend until smooth. Add mixture to a pot, on medium heat. Bring mixture to a simmer, reduce heat to low, simmer for 5 minutes.
- Remove from heat, add Cornstarch slurry, mix until Sauce thickens.
- In a bowl add the Sauce to the Strawberries, mix until well combined.
- Add Strawberries to the Pie Crusts. Place in fridge, allow to cool.
- Serve with Whipped Cream
