Lime Cookies
Ingredients:
- 30 gSplenda
- 30 gBrown Splenda
- 220 gButter, room temperature
- Dry:
- 375 gFlour
- 5 gBaking Soda
- 4 gSalt
- Wet:
- 2Lime Juice, and Zest
- 2Eggs
- 120 mlMilk
Method:
- Lemon Cookies:
- Preheat your oven to 180 ℃ / 350 ℉.
- In a stand mixer bowl, add Butter, and Splenda. With a mixer on medium speed mix for 3 minutes, (until light and fluffy).
- In a bowl, whisk together the Dry ingredients.
- Add to the Butter mixture add Eggs. Milk, and Lime, mix for 2 minutes. Slowly add Flour while mixing, mix until well combined.
- Refrigerate Dough for a minimum of 1 hour.
- Scoop out golf ball sized Dough, roll into a ball.
- On a cookie sheet, place parchment paper on cookie sheet. Place Dough balls, on cookie sheet, flatten to 0.5 cm disks.
- Bake for 18 minutes. Allow to cool.
