Cowboy Cookies
Ingredients:
- Butter:
- 340 gButter, room temperature
- 25 gSplenda
- 130 gBrown Sugar, (Splenda)
- Dry:
- 320 gPastry Flour
- 15 gBaking Powder
- 15 gBaking Soda
- 2 sticksCinnamon, ground
- 6 gSalt
- Wet:
- 200 gChocolate Chips
- 300 gRolled Oats
Method:
- Preheat oven to 175 ℃ / 350 degree ℉.
- Dry:
- Mix Flour, Baking Powder, Baking Soda, Cinnamon, and Salt in bowl.
- Butter:
- In mixer bowl, beat Butter on medium speed for 1 minute. Gradually beat in Splenda for, 2 minutes.
- Wet:
- Add Eggs, one at a time, beating after each. Beat in Vanilla.
- Mix in Flour mixture until just combined. Add Chocolate Chips, Oats, and Coconut.
- For each Cookie, drop 1/4 cup dough onto ungreased baking sheets, spacing 3 inches apart.
- Bake for 20 minutes, until edges are lightly browned.
- Remove cookies to rack to cool.
