Mushroom Fried Rice
Ingredients:
- 400 gBasmati Rice, cooked
- 200 gButton Mushrooms, sliced
- 45 mlSoy Sauce (to taste)
- 1Red Finger Chili, finely chopped
- 3 clovesGarlic, Crushed
- 15 gGinger, finely grated
- 1Red Bell Pepper, Chopped
- 1/2Onion, Chopped
- 40 gButter
- 30 mlWhite Wine
- 4 gSalt
Method:
- In a wok on medium high heat, add Butter, allow to melt. Add Mushrooms, fry for 5 minutes. Add in the Bell Peppers, Chili, and Onion, fry for 3 minutes, stirring regularly, (until Vegetables soften).
- Make a well in centre of wok, add in Garlic, and Ginger, fry for 30 seconds.
- Add Soy Sauce, allow to mostly reduce.
- Add Rice, toss for a 4 minutes, (until Rice is heated through).
