Chinese Chicken and Broccoli
Ingredients:
- Chicken:
- 500 gChicken, 0.75 cm slices
- 10 mlSesame Oil
- 3 gSalt
- 1Egg
- 3 gPepper, ground
- 16 gCorn Starch, mixed in Water to create slurry
- Vegetables:
- 300 gBroccoli, cut into florets
- 125 mlChicken Stock
- 3 clovesGarlic, crushed
- 30 gGinger, finely grated
- 1Onion, quartered, layered
- 45 mlSunflower Oil
- 20 gOyster Sauce
- 1 gSplenda
- 5 gSesame Oil
- 5 gSalt
- 4 gPepper, ground
Method:
- Chicken:
- In a bowl add Sesame Oil, Salt, Pepper, Egg White, and mix.
- Add Chicken, mix, then add Corn Starch, and mix.
- Boil Chicken for 1 ½ minutes in Water with 6 g Salt.
- Vegetables:
- Boil Broccoli, in Water with 10 g of Salt, for 2 minutes.
- In a wok on medium high heat add Oil, allow to get hot. Add Onions, fry for 1 minute. Make a well in centre of wok, add Garlic, and Ginger, fry for 30 seconds.
- Reduce heat to medium.
- Add Broccoli, Salt, Oyster Sauce, Splenda, Sesame Oil, and Pepper, mix well.
- Add Chicken, and Chicken Stock, cover, simmer for 2 minutes.
