Mix Beef with Wine, Egg, Soy, Cornstarch, Salt, Pepper, and Baking Soda. Mix thoroughly, add Oil, mix thoroughly. Set aside for minimum 1 hour.
Sauce:
- Mix Soy, Sugar, Oyster Sauce, Chicken Stock, Cornstarch, Salt, and Pepper.
Beef:
- In a wok on medium high heat add Oil, allow to get hot.
Add in the Beef in 3 smaller batches. Try to separate it so most of the Beef touches the bottom of the wok. Let one side fry for 60 seconds. Flip the Beef over and fry the other side for 50 seconds. Take Beef out and set it aside.
- In the same wok, add Oil. Add in Onions, and Chili, saute for 2 minutes. Put in Garlic, saute for 30 seconds. Pour the Sauce into the hot wok. It will start thickening quickly. Then add in the Broccoli, cook for 1 minute. Mix well. Add the Beef back into the wok. Mix well.
