Blueberry Waffles
Ingredients:
- Wet:
- 270 gBlueberries
- 430 ml / 444 gMilk, heated to 45℃
- 100 gButter, melted
- 2Eggs, Whites, and Yolks separated
- 8 gVanilla Extract
- Dry:
- 400 gFlour
- 22 gBaking Powder
- 4 gSplenda
- 6 gSalt
Method:
- In a bowl add Egg Whites. With a hand mixer, mix for 2 minutes on high speed, (until peaks almost stand).
- In a stand mixer bowl, add Dry ingredients, mix well. In a bowl mix Wet ingredients. While mixer is running, slowly add Wet ingredients, except Blueberries, and Egg Whites, to Dry ingredients. Mix on medium speed until smooth. Scrape bottom of mixer bowl, then run mixer again until smooth. Add Blueberries, mix until well combined.
- Fold in Egg Whites, until well combined.
- Add 1/3 cup Batter into each section of the preheated waffle iron.
- Heat Griddle to 200 ℃ / 400 ℉.
- Grill Waffles for 7 minutes.
