Tuna Stuffed Zucchini Boats
Ingredients:
- 2Zucchinis, halved lengthwise
- 280 gAlbacore Tuna, broken into small pieces
- 1Onion, finely chopped
- 40 mlCanola Oil
- 1Red Pepper, finely chopped, drained
- 80 mlWhite Wine
- 2 clovesGarlic, crushed
- 30 mlDark Soy Sauce
- 2 g x 20 gParmesan Cheese, finely grated (1 part for stuffing + 1 part for topping)
- 2 g x 40 gSwiss Cheese (1 part for filling + 1 part for topping)
- 2 gSalt
- 1Dundicut Chili, ground
- 2 gOregano, ground
- 4 gPepper, ground
Method:
- Preheat oven to 180 C / 360 F.
- Hollow out Zucchinis, careful not to go too deep. Finely chop hollowed out Zucchini, then drain.
- In a sauce pan on medium high heat, add Oil, allow to get hot. Add Onion, lightly season with Salt, Pepper, and Garlic Plus. Saute for 3 minutes. Add Red Pepper lightly season with Salt, Pepper, and Garlic Plus. Saute for 6 minutes. Add Zucchini, saute for 6 minutes.
- Reduce heat to medium. Add Garlic, saute for 30 seconds.
- Deglaze pan with Wine, allow Wine to mostly reduce. Add Tuna, Soy, Chili, Oregano, Salt, and Pepper.
- Remove fro heat, add Cheese, mix well, allow Cheese to melt.
- In a baking dish add Zucchini shells, then stuff shells with Tuna mixture. Sprinkle top of Zucchini boats with Cheese.
- Place Zucchini boats oven for 35 minutes
