Rendang Daging Lembu
Ingredients:
- 1 KgBeef Chuck, 1 cm thick slices and drain in a colander
- 1.25 LCoconut milk, squeezed from 1 ½ grated Coconuts with, sufficient water added
- ½Coconut, grated, for kerisik (page 11)
- 2Turmeric Leaves
- 9 gSalt
- Spice Paste:
- 5Dried Chilies, soaked 10 minutes in boiling Water
- 15 gCoriander seeds
- 2 gFennel seeds
- 70 gSesame Seeds
- 4 gPepper
- 15 gLemongrass Paste
- 12Scallions
- 6 clovesGarlic
- 8Cloves
- 5Green Cardamom
- 1 starAnise
- 16 gGinger, peeled, sliced
- 2 sticksCinnamon
- 10 gLemon Juice
- 30 mlCanola Oil
Method:
- In a food processor add Spice Paste ingredients, blend until a smooth paste.
- In a sauce pan on medium high heat add Spice Paste, saute for 3 minutes, until Paste dries out.
- Into an earthen pot, put beef, ground ingredients and coconut milk. Bring to a slow boil and simmer gently for 1 hour 15 minutes, stirring frequently, until gravy is thick.
- Add Kerisik, Turmeric, and salt. Continue stirring until gravy is almost dry and
