Grilled Volcano Pork
Ingredients:
- 1 KgPork Loin Roast, 1 cm thick slices
- Marinade:
- 13 gLemongrass Paste
- 15 gGinger, finely grated
- 1Red Finger Chilies, thinly sliced
- 2Scallions, thinly sliced
- 4 clovesGarlic, thinly sliced
- 10 gBrown Splenda
- 2Limes, Juice
- 15 mlDark Soy Sauce
- 15 mlFish Sauce
- 30 mlSunflower Oil
- 4 gTurmeric
- 4 gSalt
- 4 gPepper, ground
- 3 gCumin Seed, ground
- 6Dried Lime Leaves, ground
Method:
- In a large bowl add Pork.
- In a blender add Marinade Ingredients. Blend on high until smooth.
- Pour Marinade onto Pork, massage thoroughly and toss until it's evenly coated. Place Pork and Marinade in a bag, refrigerate overnight, (maximum 24 hrs).
- Wipe excess Marinade off the Pork, then BBQ on the preheated grill 4 minutes per side, (until internal temperature of the Pork is 63℃ / 145℉).
- Serve with Coconut Rice
