Reduce heat to medium. Add Onions, and Scallions, lightly season with Salt, Pepper, and Garlic Plus, sauté for 8 minutes, (until caramelized). Add Garlic, Ginger, and Bay Leaves, sauté for 30 seconds. Deglaze pan with the Marinade. Add Chicken back into pan.
Add enough Chicken Stock, so the Chicken is 3/4 submerged. Bring to a simmer, cover, simmer for 20 minutes, turn Chicken, simmer for 20 minutes more.
Remove Chicken, add Cornstarch to Sauce until desired thickness.
